Technical Comment: You can save money by making your own crude invertase solution. Mix one-half package of baker's yeast with approximately 40 mL of distilled (not deionized) water. Centrifuge this mixture for approximately five minutes. Decant off the top liquid and you have a crude solution of hydrolytic enzyme invertase.
