Break the carbohydrate code in this engaging “mystery lab.” Students are the detectives as they learn about the structure and properties of carbohydrates and apply their knowledge to identify unknowns. The identities of five carbohydrates—starch, glucose, fructose, lactose and sucrose—have been scrambled. Students perform a set of four classification tests in sequence to unscramble the code and identify the carbohydrates. How are monosaccharides related to di- and polysaccharides? What is the difference between a reducing and a nonreducing sugar? Each classification test addresses one of these questions and provides a single clue that will reveal the identity of an unknown. Attention never wavers as students crack the carbohydrate code and solve the structures of the unknowns. Includes reproducible student handouts, detailed background information, complete Teacher Notes with sample data and answers to all questions and all necessary chemicals and consumable supplies.
