The identities of five carbohydrates—starch, glucose, fructose, lactose and sucrose—have been scrambled. Students perform a set of four classification tests in sequence to unscramble the code and identify the carbohydrates. How are monosaccharides related to di- and polysaccharides? What is the difference between a reducing and a nonreducing sugar? Each classification test addresses one of these questions and provides a single clue that will reveal the identity of an unknown.
