Vitamin C Analysis—

Vitamin C (ascorbic acid) is very important nutritionally. Students will perform tests to determine Vitamin C content in their favorite fruit juices. The microscale procedure uses 2,6-dichloroindophenol, which is an indicator that changes color as it is reduced by ascorbic acid. Students first use a known Vitamin C solution as the standard. Then the amount of Vitamin C in various juices can be determined. Includes complete instructions and all necessary chemicals and pipets.
Complete for 24 students working in pairs. Fifteen reusable 24well reaction plates are required and available separately.

Cheese-making is a real art form. Get your students involved in their own cheese creations! Chymosin, a widely used, genetically engi- neered curdling enzyme, is used to turn milk into curds and whey. Once separated, curds are used by the students to make cheese. Students can experiment to determine what can be done to produce other variations of their cheese.
Complete with enough materials for 30 students working in pairs. Materials include powdered dry milk, chymosin, cheesecloth and complete teaching instructions.

Genetically engineered and mass produced, the enzyme chymosin is now the premiere enzyme for cheese manufacturing. It is inex- pensive, fast-acting, safe and very consistent in controlled studies. Your students will make curds and whey using milk and chymosin as they study the first intermediate step in the cheese-making process. After witnessing the basic reaction, students will become involved in designing their own controlled experiments to learn more about regulating the curding reaction of chymosin.
Complete with directions and enough chymosin to curd 100 L of milk.

The dramatic results give students first-hand experimental data on the effectiveness of sunscreens. After preliminary results, further experimentation can be done to compare brands or test other variables affecting the effectiveness of sunscreens.
Complete with enough materials for 60 trials of the experiment. This allows for studentdesigned experiments beyond the basic procedure.
