In this real-world lab activity at the crossroads of biology, chemistry, and nutrition, students separate the protein and carbohydrate components of skim milk, analyze their properties, and confirm their identity. Students develop confidence in their lab skills and gain practical experience as they measure the amount of protein and carbohydrate and verify their findings with the information provided on the nutritional label of skim milk. What better way for your students to see for themselves the applications of science in their daily lives! Includes reproducible student handouts, detailed background information, complete Instructor’s Notes with sample data and answers to questions, and all necessary chemicals and consumable supplies. Note: Fresh skim milk (one pint per lab section) is required but not provided.

Preparation and Properties of Biodiesel— Laboratory Kit

Biodiesel is an alternative processed fuel obtained from biological sources, usually vegetable oils, for use in cars and trucks. Alternative fuels such as biodiesel or bioethanol generate a great deal of interest because of concerns about climate change and the depletion of nonre- newable energy sources such as petroleum. In this activity students prepare biodiesel and investigate the amount of energy it releases when burned. Cooking (vegetable) oil is reacted to form a methyl ester by transesterification with methyl alcohol and a strong base. Once produced, the heat of combustion of the resulting biodiesel is deter- mined by calorimetry.

Green Chemistry: Ash Water Titration—
Student Laboratory Kit

Introduce acid–base titrations in a very unique way. This green chemistry version of a strong acid–strong base titration, developed in partnership with Beyond Benign, uses wood ash, a renewable source of base that can be recovered from combusted wood and organic materials, instead of sodium hydroxide. Students extract base from the wood ash by wet methods and then determine the base potential compared to NaOH.
This lab allows students to explore the concepts of acid–base chemis- try and indicators in the context of green chemistry and sustainability at a time when climate change is becoming increasingly important to our planet’s health. Includes reproducible student handouts, Teacher Notes and all necessary chemicals.
